Carrot Laddos! (Gajar ke laddo)

When we got posted here the first thing that I loved about the new home was the huge garden space. I always wished to try my hands at gardening and here I was! For the last one year we have been lucky enough to have garden fresh organic – potato, onion, beans, cauliflower, cabbage, peas, radish, spinach, coriander, mint and of course carrots.

I love having vegetables but carrots, I have always loved the most. It is one of the most versatile vegetable which tastes great in every form. Either you have it raw in salad, make carrot juice, make a savory dish outta it, pickle it or make a desert , it tastes good all the time.

This year my kitchen garden looks more like a carrot garden and I am not complaining. And I love how sweet and delicious these carrots are compared to the store bought ones and I knew a sweet dish with these carrots would be worth a try. And so here it is… Carrot Laddos!

These laddoos are healthy and mildly sweet melt in mouth desert which is super easy to make and you can store them in a fridge for two weeks.

Ingredients :

  • 1 kg Carrot ( wash properly peel of the outer layer and grate them. After you grate them, put them in a muslin cloth/cheese cloth and squeeze out the water as much as you can.)
  • 1 cup dry coconut powder
  • 1 tsp cardamom powder
  • chopped dry fruits ( I finely chopped almond and cashew nuts only )
  • Sugar ( I like using salt and sugar according to taste… I don’t like my deserts too sweet and my carrots were really sweet already so I just added 4 tbsp sugar and it worked well for me )
  • Ghee – 1 tbsp + a little to rub on your hands for making the laddos.

How you make it :

  • Heat a kadai/ any heavy bottom vessel and once its hot lower the flame and add the ghee.
  • Once the ghee is hot enough add in the grated carrot and the sugar and mix well. Keep the flame in simmer and cover it. Keep stirring at intervals.
  • After a while you will find the carrot has left water, once it does ,add in the coconut powder and the chopped dry fruits and mix well. And keep cooking the mixture with a closed lid and stirring occasionally. This is a good time to check if you need any more sugar.
  •  Once the water has almost dried up add in the cardamom powder. While the water is almost drying up the carrot should also cook by now. Keep the lid open and now stir the mixture till it dries up enough to make firm laddos. Keep a check as it should not turn too dry or burn as it will spoil the taste of the desert.
  • Once your mixture if of the right consistency turn off the flame and spread the mixture on a plate to cool down. Make sure you don’t leave the mixture in the vessel/kadai as the heat shall dry it up.
  • After it has cooled down take a few drops of ghee in your hands and grease it and start forming walnut size balls(laddoo in hindi). Press gently but firmly to bind the laddos together.
  • Serve with a drizzle of condensed milk 😉
